If you asked me, “What is the difference between Between Sips and simply having a tea cocktail?”

I think the difference might lie in the word “Between.”

We are used to drinking while chatting, playing drinking games, pairing drinks with food, or simply ordering a round of shots to get together and celebrate with friends.

But what Between Sips wants to do is let you slow down a little between each sip.

Start with a cup of tea: smell its aroma, taste it as it is, learn where it comes from and how it is made.

Then, we will let you taste a tea spirit developed from the same tea.

When tea meets alcohol, some aromas are amplified and some flavors become deeper. You will begin to find that the same tea leaf, in a different medium, also takes on a different expression.

Finally, a complete tea cocktail.

The bartender brings their own understanding, cultural background, and creative approach, reinterpreting this tea.

So the three cups you drink are not actually three different works.

They are three stages of the same tea:

Tea → Tea & Spirit → Tea Cocktail

From getting to know it, to transformation, and then to creation.

This is why we designed Between Sips.

Each month, we also invite a bartender from New York to join this conversation.

We offer a carefully selected Taiwanese tea, letting bartenders from different backgrounds and styles understand it through their own palate and experience, then tell us: “If this tea were handed to you, how would you tell its story?”

We like this because cultural exchange does not necessarily need to begin with something very grand.

Sometimes, it only takes sitting down and pouring a cup of tea.

One person shares a culture they know well; another responds in their own way; and in the end, guests join this conversation through taste.

What Between Sips wants to promote has never been just a “cocktail with tea.”

We hope more people get to know Taiwanese tea and understand the flavors of tea, and that more bartenders begin to think about how tea can exist within contemporary cocktails.

So, the next time you come to Between Sips, do not rush to finish. The truly interesting part often happens between two sips.
